Originally all types of vinegar are made of acetic acid. Acetic acid is very strong in the undiluted form (because it can burn your throat) which is made by fermentation of all kinds of fruits, sugarcane, and grains. Like alcohol is made from food fermentation.
Similarly, fermentation of all types of food leaves acetic acid. Even the smell of garbage is due to acetic acid, which is made from the fermentation of food products. This acetic acid is made by bacteria called acetic acid bacteria. This bacteria is ubiquitous, it is present everywhere. As it spreads easily through houseflies, and all types of microorganisms, it is also present inside our body, inside our intestine, inside the vagina of women, acetic acid is present with other acids (like lactic acid). Due to these acids, the vaginal fluid is acidic. Acetic acid or other acids have a protective role in the vagina because it contains anti-bacterial properties.
Fats and carbohydrates present in our diet are also digested with the help of a naturally occurring acetyl group (which is the main constituent of acetic acid). The acetyl component mixes coenzyme A to make Acetyl-CoA.
And inside our body helps to digest fat and carbohydrate in the glycolysis and Krebs cycle. Acetic acid bacteria creates acetic acid and makes it secret. With this acetic acid, vinegar is formed. The concentration of acetic acid in different types of vinegar with water and flavor can vary from 5-20%.
